If you read my review of my Power Quick Pot than you know how much I am enjoying using it for quick and delicious meals. When I first received my pot I checked out a cookbook called The Fresh and Healthy Instant Pot Cookbook by Megan Gilmore. This is where I got my chicken recipe that I made. Chicken recipes start on page 160 and there are so many of them. I only tried the roasted chicken recipe. There is barbecue chicken, Chicken and Rice, and so many more. This cookbook is easy to use and allows you to have extras for leftovers and to also use the leftover chicken for other meals in other recipes. I like that a lot.
I have encountered cookbooks where there are no photographs of the end result of the recipe and that leaves me frustrated. I’m glad that in Gilmore’s cookbook, she doesn’t leave her readers and would be chefs wondering if their finish dish looks right or not.
I also think families with children will benefit from this cookbook also because there are yummy recipes that children will love like cauliflower mac and cheese. It looks so yummy in the photograph and I will be trying this recipe in the future. This cookbook shows you how to make cauliflower rice in your instant pot and even spaghetti squash for easy pasta dishes. This will help the keto eating crowd.
