Just like the rest of you I am in quarantine. I have been busy writing articles for Wellness Works NW and reading a ton of books and watching DVD’s that I got before my Library closed. One of the gems I got from my library is a new cookbook from Jamie Oliver.

Ultimate Veg is a beautiful cookbook with a lot of great pictures. Here are some key elements that I love in this cookbook:

  • The focus is on vegetables. There are no meat recipes in it. I love this because I can get an idea of how to cook my vegetables and enjoy them. There are a couple of recipes for Moussaka. I love Moussaka from Alexis Restaurant, a Greek restaurant in Portland Oregon that I love. [Alexis Restaurant closed in 2016]
  • I love the photographs. They are beautiful and make the food look delicious. 
  • The ingredients are things that I can buy in my own grocery store. 

This is a vegetarian cookbook, so it doesn’t work for Vegan dieters. Although, I am sure vegan eaters can adapt the recipes well. 

I have copied several recipes to try and make. This will be a fun thing to do while I am in quarantine and waiting to get some things done. I also found some great recipes to make for when I start up my infusions again and not feeling well.

Jamie’s pickle recipe to make vegetable pickles is similar to how I learned to pickle from my mom and I was excited to see that I was doing it correctly. I was doing it from memory before.
