Holiday meals can be overwhelming for us trying to stay healthy.
I always save dessert for the holidays for a treat.
Today’s tip: Changing an American Classic to a Healthy Meal
Instead of stuffing try gluten free stuffing. I use any stuffing recipes just substitute with gluten free bread. Here’s what I do:
Gluten Free Stuffing
Ingredients:
- 6 cups Gluten free bread, cut and toasted
- 3 TBSP Herbs- sage, garlic, parsley, basil, oregano
- 2 1/3 cup Low sodium chicken stock
- 1 cup each Onion and celery, diced
- 1 can Organic gluten free cream of chicken soup
Directions:
- I like to cut my bread in squares and toast them in the oven.
- Sauté onion and celery in clarify butter until tender then add stock.
- After heated I mixed the herbs and bread.
- Then put mixture in lightly grease pan and cover with foil.
- Bake in oven at 350 degree for 20 mins and remove foil. Bake another 5 mins.
- I put cream of chicken soup over the top of stuffing to keep moist.
Enjoy!
Have fun with it create your own healthy twist to it!
WARNING! You would be surprised how many store bought broths have gluten in them; if you didn’t make the broth yourself please make sure to purchase “Gluten Free Broth” when cooking for someone challenged with Celiac Living.
