The temperature drops, the rain starts falling or the snow, and the first thing we all start craving is a nice hot bowl of soup or stew. January is National Soup Month. There are so many ways to to write about soup, I decided that I would share some healthy soup recipes for a couple eating plans. The three eating plans I have chosen are Diabetic, Vegan, and AIP Paleo. One recipe I found was for Borscht. My caregiver Yelena taught me her family’s recipe for Borscht, the recipe I found is different but still delicious I am sure.

What makes soup such an excellent meal is that you get your protein, carbs, and fat all in one bowl. It is piping hot and it warms the body quickly. I know when I eat a hot bowl of soup my nose start running, how about you? I tried to find recipes for soup that are different but are easy to make.
